Hawkers of ready-to-eat hot and cold delicacies can be found on every busy thoroughfare in every town and city. For many first-time visitors to Taiwan, the sight of vendors stirring vats of steaming soup and pushing oyster omelets around a hot plate has them reaching for their cameras.
